Holiday Baking: Cheesecake Finally!!

So this past Saturday I finally had time to start my holiday baking (thank you work for not calling me in on another day off), and I started with a bang… Cheesecake. This is one of my bf’s favorite desserts and I had been waiting and waiting since Tuesday to make it. For you see I had bought the ingredients for this cheesecake recipe the weekend prior, thinking I would be baking on Tuesday afternoon.

 But before I really get started on the story of the cheesecake escapade I should probably give you the recipe I used. I used the Philadelphia cream cheese Easy 3-step cheesecake recipe, It can be found here. I used this recipe because it is simple and quite easy. All you need for this recipe is; 2pks of creamcheese I got mine as a two pack at walmart, eggs, sugar, a graham cracker crust, and vanilla extract;
pretty simple right? We have used this simple cheesecake recipe in my family for years (I think since before we lived on Guam back in 1992) I know a long time right. It always reminds me of my mother. Anyway back to the recipe. I just followed it completely, something I always do the first time I make something for myself, and it turned out pretty well considering that I accidentally left it in the oven longer than I really should have. And it did end up cracking a little bit around the edges. But I think it turned out fantastic.

I should also add that this is the first time that I have baked anything with a custard base in the gas oven and with that in mind the fact that it only cracked this tiny amount. 
I think that is super amazing. I do know what I will be bringing with me to the Christmas dinner we were invited to as well, this cheesecake, the apple-butter banana bread (I might post about this later, my mom just sent me the recipe) or maybe just some of my special homemade frosted ginger cookies. Or I might just go the safe route and pick up some amaretto cake (his mom is allergic to cinnamon) and while it is a negligible amount in both the bread and the cookies, it is better to be safe than sorry right?

Well I think that is all that I really have to say within this post. I know that it is not the most elaborate cheesecake recipe and it is not the most difficult either, but it is one of my personal favorites. While I do hope that I can make a more elaborate one in the future, I just do not feel comfortable enough with my oven to try (has a slight fear of disaster and failure) anyway I hope that you all enjoyed this post and I will be posting more with my baking escapades in the very near future. Should my day job allow me some more time off, if not then I know after Christmas I will be able to bake and write more for you.
